Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the rolled oats, flour, baking soda, and salt.
- In a separate bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the large egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined.
- Gently fold in the chopped dried figs.
Baking
- Drop spoonfuls of the dough onto a lined baking sheet, leaving space between each cookie.
- Bake for 12-15 minutes, or until they are golden around the edges.
- Let cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
