  • 2 cups rolled oats
  • 2 cups milk (dairy or non-dairy)
  • 2 medium apples, peeled, cored, and diced
  • 1/4 cup brown sugar (or maple syrup) Adjust for sweetness preference
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp vanilla extract
  • 1/2 cup raisins (optional)
  • 1/4 cup chopped nuts (such as walnuts or pecans) Optional
  • 1 pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Gather all your ingredients. Peel, core, and dice the apples, and prepare nuts or raisins if using.
  3. In a large mixing bowl, combine the rolled oats, brown sugar, cinnamon, nutmeg, and salt. Stir well to combine.
  4. In another bowl, mix together the milk and vanilla extract. Pour this mixture into the dry ingredients and stir until everything is evenly combined.
  5. Gently fold in the diced apples, raisins, and nuts if you’re using them. Ensure everything is nicely mixed.
  6. Pour the oatmeal mixture into a greased 9x9 inch baking dish, spreading it evenly.
Baking
  1. Place the dish in the preheated oven and bake for 35-40 minutes, or until the edges are golden and the center is set.
Serving
  1. Allow the bake to cool for a few minutes before slicing. Serve warm and enjoy!

Notes

Customize sweetness and try a mix of sweet and tart apples for a deeper flavor. Can prepare the mixture the night before for convenience.
