Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk or almond/coconut milk for lactose-free
  • 1 large egg can substitute with flaxseed egg for vegan option
  • 2 tablespoons melted butter
Filling and Cooking
  • Nutella Nutella, for filling Ensure it's at room temperature
  • Cooking spray or butter for greasing

Preparation
  1. Gather all the ingredients listed above, and make sure your Nutella is at room temperature for easy filling.
Make the Batter
  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  2. In another bowl, whisk together the milk, egg, and melted butter until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps.
Cook the Pancakes
  1. Preheat a non-stick skillet or griddle over medium heat. Grease the surface lightly with cooking spray or butter.
  2. For each pancake bomb, drop a spoonful of batter onto the heated pan. Before the batter fully spreads, add a small dollop of Nutella in the center. Cover with another spoonful of batter, ensuring the Nutella is encased.
  3. Cook until bubbles form on the surface, then carefully flip to cook the other side until golden brown, about 2-3 minutes per side.
  4. Remove the pancake bombs from the pan and place them on a serving plate. You can dust them with powdered sugar or serve them with a side of fresh fruits and whipped cream!

Notes

Store leftovers in an airtight container for up to three days or freeze for up to three months. Reheat in the microwave for 20-30 seconds or warm in a skillet.
