Main Ingredients
  • 2 pieces ripe bananas The riper the bananas, the sweeter the muffins will be.
  • 1 cup Nutella (or any chocolate hazelnut spread of your choice) Feel free to experiment with other chocolate or nut spreads.
  • 1 cup all-purpose flour Whole wheat flour can be used for a healthier option.
  • 1/2 cup sugar You may reduce the sugar based on preference.
  • 1/4 cup milk
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 large egg

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line your muffin tin with cupcake liners or grease them lightly.
  3. In a mixing bowl, mash the two ripe bananas until smooth.
  4. Add the large egg, milk, and vanilla extract to the mashed bananas and whisk until combined.
  5. Gently fold in the Nutella and mix carefully to maintain a swirled effect.
  6. In another bowl, combine flour, sugar, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, folding until just combined.
  7. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full and swirl a little more Nutella on top.
Baking
  1. Place them in your preheated oven and bake for 18-20 minutes, or until a toothpick comes out clean.
Cooling
  1. Let them cool in the tin for about 5 minutes before transferring to a wire rack.
  2. Enjoy warm or at room temperature.

Notes

For added crunch, consider sprinkling some walnuts on top. Store in an airtight container for 3-4 days, or freeze for up to three months.
