Preparation
- Preheat your oven to 350°F (175°C).
- Line your muffin tin with cupcake liners or grease them lightly.
- In a mixing bowl, mash the two ripe bananas until smooth.
- Add the large egg, milk, and vanilla extract to the mashed bananas and whisk until combined.
- Gently fold in the Nutella and mix carefully to maintain a swirled effect.
- In another bowl, combine flour, sugar, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, folding until just combined.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full and swirl a little more Nutella on top.
Baking
- Place them in your preheated oven and bake for 18-20 minutes, or until a toothpick comes out clean.
Cooling
- Let them cool in the tin for about 5 minutes before transferring to a wire rack.
- Enjoy warm or at room temperature.
Notes
For added crunch, consider sprinkling some walnuts on top. Store in an airtight container for 3-4 days, or freeze for up to three months.
