Main Ingredients
  • 4 pieces chicken breasts (boneless, skinless)
  • 1 cup uncooked long-grain white rice
  • 1 can cream of chicken soup Or your choice of cream soup
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese For topping
  • 1 packet onion soup mix (dry)
  • 1 tablespoon olive oil For greasing the baking dish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a 9x13 inch baking dish with olive oil.
  3. Add the uncooked rice evenly in the bottom of the greased dish.
  4. Place the chicken breasts on top of the rice. Season with salt and pepper to taste.
  5. In a bowl, combine the cream of chicken soup, chicken broth, and the onion soup mix. Mix until smooth.
  6. Carefully pour the soup mixture over the chicken and rice. Do not stir.
  7. Sprinkle shredded cheddar cheese generously on top.
Baking
  1. Cover the baking dish tightly with aluminum foil.
  2. Bake for 1 hour without opening the foil.
  3. After an hour, remove the foil and let it sit for a few minutes before serving.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 3-4 days, or freeze for up to 3 months. Reheat at 350°F (175°C) for 20-25 minutes covered with foil.
