Preparation
- In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until the mixture resembles wet sand.
- Press this tightly into the bottom of a greased 9x9 inch baking pan to form an even crust.
- In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth.
- Add vanilla extract and mix until combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold this whipped cream into the cream cheese mixture using a spatula, being careful not to deflate it.
- Add the fresh raspberries and gently fold them into the cheesecake mixture.
- Pour the filling over the prepared crust.
Chilling
- Cover the pan and let it chill in the refrigerator for at least 4 hours, or until set.

- Once chilled, cut into bars and drizzle with raspberry puree and extra raspberries if desired.
