  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice Can substitute with pumpkin spice.
Coating and Texture
  • 1 cup crushed graham crackers
  • 1/2 cup chocolate chips Optional for adding chocolate flavor.
  • Chocolate or white chocolate for coating melted Optional. Use halal-certified if needed.

Preparation
  1. Start by ensuring your cream cheese is at room temperature for easy mixing.
  2. In a mixing bowl, combine the softened cream cheese, pumpkin puree, powdered sugar, vanilla extract, and pumpkin pie spice. Use a hand mixer or spatula to mix until smooth and creamy.
  3. Slowly fold in the crushed graham crackers, ensuring they are evenly distributed throughout the mixture.
  4. Using a cookie scoop or your hands, form small balls with the mixture, about 1-inch in diameter. Place them on a parchment-lined baking sheet.
  5. Cover the baking sheet with plastic wrap and refrigerate the balls for at least 30 minutes to firm up.
  6. If desired, melt chocolate or white chocolate in a microwave or double boiler. Dip each chilled ball in the melted chocolate, then place them back on the parchment paper to set.
  7. Once the chocolate is set, they are ready to enjoy! These no-bake treats can be served immediately or stored for later.

Notes

Store in an airtight container in the refrigerator for 5-7 days. These also freeze well; separate them with parchment paper before freezing.
