- Start by ensuring your cream cheese is at room temperature for easy mixing.
- In a mixing bowl, combine the softened cream cheese, pumpkin puree, powdered sugar, vanilla extract, and pumpkin pie spice. Use a hand mixer or spatula to mix until smooth and creamy.
- Slowly fold in the crushed graham crackers, ensuring they are evenly distributed throughout the mixture.
- Using a cookie scoop or your hands, form small balls with the mixture, about 1-inch in diameter. Place them on a parchment-lined baking sheet.
- Cover the baking sheet with plastic wrap and refrigerate the balls for at least 30 minutes to firm up.
- If desired, melt chocolate or white chocolate in a microwave or double boiler. Dip each chilled ball in the melted chocolate, then place them back on the parchment paper to set.
- Once the chocolate is set, they are ready to enjoy! These no-bake treats can be served immediately or stored for later.
Notes
Store in an airtight container in the refrigerator for 5-7 days. These also freeze well; separate them with parchment paper before freezing.
