Preparation
- In a large bowl, mix together the rolled oats and protein powder until well combined.
- In a separate microwave-safe bowl, combine the peanut butter and honey. Microwave the mixture for about 20-30 seconds until it's nice and warm to stir.
- Pour the warmed peanut butter and honey over the oats and protein powder mixture. Add the vanilla extract and use a spatula to combine thoroughly.
- Once combined, gently fold in the dark chocolate chips.
- Line an 8x8 inch baking dish with parchment paper. Press the mixture evenly into the dish, spreading it out to all corners.
- Refrigerate for about 1-2 hours, or until firm.
- Slice into bars and enjoy!
Notes
You can customize the bars with nuts, seeds, or dried fruits. Store in an airtight container in the fridge for up to a week or freeze for up to three months.
