Mixing
- In a large bowl, combine the peanut butter, rolled oats, honey or maple syrup, vanilla extract, and salt. Stir everything together until well mixed. The mixture should be thick and sticky.
Customization
- If you’re adding chocolate chips, fold them in gently at this stage. Feel free to get creative with nuts or seeds!
Molding
- Line a muffin tin with cupcake liners or grease it lightly. Spoon the mixture into each cup, pressing it down firmly with the back of a spoon to create even layers.
Chilling
- Place the muffin tin in the refrigerator for about 30 minutes. This allows the cups to set properly.
Serving
- Once chilled, simply pop them out of the muffin tin and enjoy! These No-Bake Peanut Butter Oat Cups will keep their shape and are ready for any occasion.
Notes
Store in an airtight container in the refrigerator for up to a week. Can be frozen for up to three months. Let thaw in the refrigerator or enjoy straight from the freezer.
