  • 1/2 cup honey or maple syrup Maple syrup can be used for a vegan option.
  • 2 cups rolled oats Do not use instant oats; use rolled oats for the ideal chewiness.
  • 1/2 cup chocolate chips Add for a sweet finish.
  • 1/2 cup powdered sugar Optional for added sweetness.

Preparation
  1. Grease a 9x9 inch baking pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine peanut butter and honey or maple syrup. Stir until well mixed.
  3. Gradually mix in rolled oats until fully incorporated.
  4. Gently fold in chocolate chips.
  5. If desired, add powdered sugar and mix until fully incorporated.
  6. Transfer the mixture into the prepared pan and press down firmly to create an even layer.
  7. Refrigerate for at least 2-3 hours, or until firm.
  8. Once set, cut into bars and enjoy!

Notes

For nut allergies, substitute with sunflower butter. Store in an airtight container in the refrigerator for up to a week or freeze for longer storage. Let sit at room temperature before enjoying.
