  • 1/2 cup almond butter (or other nut butter of choice) Substitute with sunflower seed butter for a nut-free option.
  • 1/4 cup honey or maple syrup Maple syrup can be used as a substitute for honey.
  • 1 zest of lemon
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons poppy seeds
  • 1 scoop vanilla protein powder (optional)
  • a pinch of salt For extra flavor.

Preparation
  1. In a large mixing bowl, combine the rolled oats, almond butter, honey or maple syrup, lemon zest, lemon juice, poppy seeds, and vanilla protein powder (if using). Add a pinch of salt.
  2. Mix well using a spatula or your hands until all ingredients are thoroughly combined. If the mixture seems too dry, add a bit more almond butter or honey.
  3. Take small portions of the mixture and roll them into bite-sized balls, about 1 inch in diameter.
  4. Place the rolled protein balls onto a parchment-lined tray or plate.
  5. Refrigerate the protein balls for about 30 minutes to firm up.
  6. Enjoy immediately or store in an airtight container in the refrigerator.

Notes

These protein balls store well in the refrigerator for up to one week or can be frozen for about three months. They are perfect for snacks or pre-workout energy boosts.
