Preparation
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy for about 2-3 minutes on medium speed.
- Gradually add the powdered sugar to the cream cheese, mixing on low until combined. Add the vanilla extract and lemon juice, mixing until smooth.
- In a separate bowl, whip the heavy cream until it forms stiff peaks. Be careful not to overwhip.
- Gently fold the whipped cream into the cream cheese mixture to keep it fluffy and light.
Assembly
- Pour half of the creamy mixture into the pre-made graham cracker crust.
- Add a layer of blueberries, then top with the remaining cream mixture.
- Cover the dessert with plastic wrap and refrigerate for at least 4 hours or until set.
Serving
- Garnish with leftover blueberries before slicing and serving. Enjoy!
Notes
For a lighter version, use low-fat cream cheese or Greek yogurt. Store in the fridge for 3-4 days, or freeze for later enjoyment. Thaw in the refrigerator overnight.
