Ingredients
  

Energy Balls Base
  • 1 cup pumpkin puree The star ingredient for velvety texture.
  • 1/2 cup oats Provides fiber and energy.
  • 1/4 cup nut butter Almond or peanut butter works great.
  • 1/4 cup honey or maple syrup Natural sweetness to bring everything together.
  • 1 teaspoon pumpkin pie spice The quintessential fall flavor.
  • 1/2 teaspoon vanilla extract Adds depth of flavor.
Optional Ingredients
  • 1/4 cup chopped nuts or chocolate chips For crunch or sweetness.

Preparation
  1. In a large bowl, combine the pumpkin puree, oats, nut butter, honey or maple syrup, pumpkin pie spice, and vanilla extract. Mix well until nicely blended.
  2. If using, fold in the chopped nuts or chocolate chips to disperse evenly.
  3. Cover the bowl with plastic wrap and let it chill in the fridge for about 30 minutes to firm up.
  4. Once chilled, scoop about a tablespoon of the mixture and roll it into a ball using your hands. Repeat until all the mixture is rolled.
  5. Place in an airtight container. Enjoy right away, or store in the fridge.

Notes

For a nut-free version, use sunflower seed butter. You can experiment with adding dried fruits for extra flavor. Keep an eye on stickiness — adjust with more oats or nut butter if necessary. These energy balls last up to a week in the fridge or can be frozen for 3 months.
