- In a large bowl, combine the pumpkin puree, oats, nut butter, honey or maple syrup, pumpkin pie spice, and vanilla extract. Mix well until nicely blended.
- If using, fold in the chopped nuts or chocolate chips to disperse evenly.
- Cover the bowl with plastic wrap and let it chill in the fridge for about 30 minutes to firm up.
- Once chilled, scoop about a tablespoon of the mixture and roll it into a ball using your hands. Repeat until all the mixture is rolled.
- Place in an airtight container. Enjoy right away, or store in the fridge.
Notes
For a nut-free version, use sunflower seed butter. You can experiment with adding dried fruits for extra flavor. Keep an eye on stickiness — adjust with more oats or nut butter if necessary. These energy balls last up to a week in the fridge or can be frozen for 3 months.
