Ingredients
  

Dry Ingredients
  • 1 cup rolled oats
  • 1 teaspoon pumpkin pie spice
  • 1/4 cup chocolate chips (optional) You can skip if desired.
Wet Ingredients
  • 1/2 cup pumpkin puree
  • 1/4 cup almond butter or peanut butter Choose as per preference.
  • 1/4 cup honey or maple syrup Use maple syrup for vegan option.
  • 1/2 teaspoon vanilla extract

Preparation
  1. In a large mixing bowl, start by adding the rolled oats, pumpkin pie spice, and any optional add-ins like chocolate chips. Mix them together lightly.
  2. Add the pumpkin puree, almond or peanut butter, honey or maple syrup, and vanilla extract to the dry mixture.
  3. Using a spatula or your hands, mix everything until well combined. The mixture should stick together without being too wet or too dry.
  4. Once combined, take a small scoop of the mixture and roll it between your palms to form balls about an inch in diameter. Place them on a baking sheet lined with parchment paper.
  5. Refrigerate the energy balls for about 30 minutes to firm them up. Once they’re set, they’re ready to be enjoyed.

Notes

These energy balls can be stored in an airtight container in the refrigerator for about a week or frozen for up to two months. Thaw in the fridge or at room temperature.
