- In a mixing bowl, add the cottage cheese, rolled oats, cocoa powder, honey (or maple syrup), chocolate chips, vanilla extract, and a pinch of salt.
- Use a fork to mash the cottage cheese while thoroughly mixing all the ingredients. Aim for a dough-like consistency.
- Cover the bowl and place it in the refrigerator for about 15-30 minutes to help firm up the mixture.
- After chilling, scoop the mixture into small portions and roll each portion into a ball, about one inch in diameter.
- Place the formed balls onto a plate or baking sheet lined with parchment paper.
- Enjoy immediately or store in the fridge for later.
Notes
For best results, allow the mixture to chill before rolling into balls. Store in an airtight container in the refrigerator for up to one week or freeze for longer storage, separating with parchment paper.
