Preparation
  1. Start by peeling your onions and slicing them into even rings or half-moons.
Cooking
  1. In a large skillet, heat the olive oil over medium heat, allowing it to warm without smoking.
  2. Add the sliced onions to the skillet, stirring occasionally to coat them in the oil.
  3. Sprinkle with salt and pepper to enhance the flavor and draw out the moisture.
  4. Cook the onions on medium-low heat, stirring every few minutes to caramelize the sugars evenly.
  5. After about 25-30 minutes, or once they are a rich, caramel color, drizzle in balsamic vinegar if desired. Cook for another 2-3 minutes and remove from heat.

Notes
