Preparation
- Boil the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, following package instructions, reserving 1 cup of pasta water before draining.
- Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute, being careful not to let it brown.
- Add Tomatoes: Toss in the diced fresh tomatoes and cook for about 5-7 minutes until softened. Season with salt and black pepper.
- Combine: Add the cooked pasta to the skillet with the tomatoes. Pour in a little reserved pasta water to help create a sauce, stirring well to combine.
- Finish with Basil: Remove the skillet from the heat and gently fold in the fresh basil leaves, allowing them to wilt slightly.
- Serve: Plate the pasta and top with freshly grated Parmesan cheese if desired. Enjoy warm!
Notes
For best results, use fresh ingredients. Store leftovers in an airtight container for up to 3 days and reheat gently on the stove, adding a splash of water if needed.
