- In a large bowl, add the boneless chicken thighs and buttermilk. Cover and let them marinate for at least 30 minutes.
- In another bowl, combine the flour, cayenne pepper, paprika, garlic powder, onion powder, salt, and pepper. Mix well.
- Remove the chicken from the buttermilk, letting excess drip off, and dredge each piece in the flour mixture.
Cooking
- Heat oil in a frying pan over medium-high heat. Once hot, add the coated chicken pieces and fry until golden brown and cooked through, about 7-8 minutes per side.
- In a small bowl, combine remaining flour, cayenne pepper, and a touch of hot sauce or butter to create a spicy mixture.
- Once cooked, toss the chicken in the sauce mixture to coat it evenly.
Assembly
- Slice the slider buns in half. Place a piece of hot chicken on the bottom half, top with pickles, and add hot sauce if desired.
- Cover with the top half of the bun and serve immediately.
