Preparation
- Preheat your oven to 350°F (175°C) and prepare a 9x13 inch baking dish by greasing it or lining it with parchment paper.
- In a large bowl, combine the creamy peanut butter, brown sugar, and granulated sugar; mix well until smooth.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, whisk together the flour and baking soda, then gradually add this mixture to the peanut butter mix until combined.
- Fold in the oats, semi-sweet chocolate chips, and M&Ms until evenly distributed.
Baking
- Transfer the mixture into the prepared baking dish and smooth it out evenly.
- Bake in the preheated oven for 20-25 minutes, or until lightly golden and a toothpick inserted comes out clean.
Cooling and Serving
- Allow the bars to cool in the dish for about 15 minutes before slicing them into squares.
- Serve warm and enjoy!
Notes
For a nut-free option, substitute peanut butter with sunbutter or any other nut-free alternative. Avoid overbaking to maintain chewiness. Store in an airtight container at room temperature for 3-4 days, refrigerate for up to a week, or freeze for up to three months.
