  • 1/2 tsp baking soda For leavening.
  • 2 large eggs At room temperature.
  • 1 tsp vanilla extract For added flavor.
  • 3 cups old-fashioned oats Not instant oats.
  • 1 cup semi-sweet chocolate chips Can substitute with milk chocolate chips.
  • 1/2 cup M&Ms or similar candy Halal certified options.

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a 9x13 inch baking dish by greasing it or lining it with parchment paper.
  2. In a large bowl, combine the creamy peanut butter, brown sugar, and granulated sugar; mix well until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour and baking soda, then gradually add this mixture to the peanut butter mix until combined.
  5. Fold in the oats, semi-sweet chocolate chips, and M&Ms until evenly distributed.
Baking
  1. Transfer the mixture into the prepared baking dish and smooth it out evenly.
  2. Bake in the preheated oven for 20-25 minutes, or until lightly golden and a toothpick inserted comes out clean.
Cooling and Serving
  1. Allow the bars to cool in the dish for about 15 minutes before slicing them into squares.
  2. Serve warm and enjoy!

Notes

For a nut-free option, substitute peanut butter with sunbutter or any other nut-free alternative. Avoid overbaking to maintain chewiness. Store in an airtight container at room temperature for 3-4 days, refrigerate for up to a week, or freeze for up to three months.
