Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir in the melted coconut oil into the mashed bananas.
- Add the eggs and vanilla extract to the banana mixture. Mix until well combined.
- In a separate bowl, whisk together the sugar, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring gently until combined.
- Sift in the flour and fold it in carefully, avoiding overmixing.
- If using, fold in walnuts or chocolate chips gently.
- Pour the batter into your prepared loaf pan and smooth it out evenly.
Baking
- Bake in the preheated oven for 60 minutes or until a toothpick inserted into the center comes out clean.
- Once baked, let it cool in the pan for about 10 minutes before transferring to a wire rack.
Notes
Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months. Reheat slices in the microwave for 15-20 seconds.
