Ingredients
  

Main Ingredients
  • 3 pieces ripe bananas, mashed The riper, the better!
  • 1/3 cup melted coconut oil (or vegetable oil) Ensure it's not too hot
  • 1 teaspoon vanilla extract
  • 1 cup sugar Reduce to 3/4 cup for less sweetness
  • 2 large eggs, room temperature
  • 1 teaspoon baking soda
  • a pinch salt
  • 1 1/2 cups all-purpose flour
Optional Add-Ins
  • 1/2 cup chopped walnuts or chocolate chips Ensure they are halal-compliant!

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted coconut oil into the mashed bananas.
  4. Add the eggs and vanilla extract to the banana mixture. Mix until well combined.
  5. In a separate bowl, whisk together the sugar, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring gently until combined.
  6. Sift in the flour and fold it in carefully, avoiding overmixing.
  7. If using, fold in walnuts or chocolate chips gently.
  8. Pour the batter into your prepared loaf pan and smooth it out evenly.
Baking
  1. Bake in the preheated oven for 60 minutes or until a toothpick inserted into the center comes out clean.
  2. Once baked, let it cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months. Reheat slices in the microwave for 15-20 seconds.
