- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
- In a large bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon. Whisk them together until well mixed.
- In another bowl, whisk together the melted butter, buttermilk, and eggs until fully combined.
- Pour the wet mixture into the dry ingredients and gently fold with a spatula until just combined. Be careful not to over-mix.
- Gently fold in the diced apples until they’re evenly distributed within the batter.
- In a separate bowl, mix together the brown sugar, rolled oats, and any remaining melted butter (if desired). Use your fingers to create a crumbly texture.
- Spoon the muffin batter evenly into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle the crumb topping generously over each muffin.
- Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
- Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
Notes
Experiment with different apple varieties for added flavor complexity. Consider using whole wheat flour or substituting half the sugar with mashed bananas for a healthier option. Keep an eye on your baking time, as ovens may vary.
