  • 1 cup buttermilk
  • 2 large eggs

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon. Whisk them together until well mixed.
  3. In another bowl, whisk together the melted butter, buttermilk, and eggs until fully combined.
  4. Pour the wet mixture into the dry ingredients and gently fold with a spatula until just combined. Be careful not to over-mix.
  5. Gently fold in the diced apples until they’re evenly distributed within the batter.
  6. In a separate bowl, mix together the brown sugar, rolled oats, and any remaining melted butter (if desired). Use your fingers to create a crumbly texture.
  7. Spoon the muffin batter evenly into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle the crumb topping generously over each muffin.
  8. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  9. Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
