Ingredients
  

For the berry filling
  • 1 cup mixed berries (strawberries, blueberries, raspberries) Use fresh or frozen berries
  • 1 tablespoon sugar Adjust sweetness to your liking
  • 1 tablespoon cornstarch To thicken the filling
  • 1 teaspoon vanilla extract For additional flavor
For the pastry
  • 1 package puff pastry sheets High-quality pre-rolled is easier to work with
  • 1 egg for egg wash Gives a golden color on baking
  • powdered sugar for dusting Optional; for serving

Method
 

Preparation
  1. In a medium bowl, combine the mixed berries, sugar, cornstarch, and vanilla extract. Gently mix until the berries are coated, and set the mixture aside.
  2. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  3. On a lightly floured surface, roll out the puff pastry sheets to about 1/8 inch thick. Cut the dough into squares, approximately 4x4 inches.
Assembly
  1. Place a tablespoon of the berry filling in the center of each pastry square. Be careful not to overfill.
  2. Fold the pastry over to form a triangle, press the edges together, and crimp them with a fork to seal.
  3. Whisk the egg in a small bowl and brush it over the top of each turnover.
Baking
  1. Place the turnovers on the prepared baking sheet and bake for 15-20 minutes or until they turn golden brown and flaky.
  2. Once baked, let them cool for a few minutes. Dust with powdered sugar before serving.

Notes

Store in an airtight container in the fridge for up to 3 days. You can freeze them before baking and bake straight from frozen.
