Ingredients
  

For the Berry Filling
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup granulated sugar For macerating the berries
  • 1/2 teaspoon cinnamon For the berry filling
For the Crumble
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar Remaining sugar for crumble
  • 1/2 cup unsalted butter (melted) Used for binding the crumble
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon For the crumble mixture

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a rectangular baking dish (approximately 9x9 inches) by lining it with parchment paper.
  2. In a medium bowl, combine your mixed berries, 1/4 cup of granulated sugar, and a pinch of cinnamon. Toss gently until the berries are well coated. Set aside to marinate while you prepare the crumble mixture.
  3. In a large bowl, combine the rolled oats, flour, both types of sugar, salt, and remaining cinnamon. Mix well, then pour in the melted butter and vanilla extract. Stir until the mixture resembles coarse crumbs.
Assembly and Baking
  1. Press about two-thirds of the crumble mixture firmly into the bottom of your prepared baking dish.
  2. Spread the berry filling evenly over the top, then sprinkle the remaining crumble over the berries.
  3. Bake in the oven for 30-35 minutes or until the top is golden and the berries are bubbly.
Cooling and Slicing
  1. Allow the bars to cool completely in the pan before lifting them out using the parchment paper.
  2. Slice them into squares or bars and enjoy!

Notes

Store in an airtight container in the refrigerator for up to 5 days. Freeze for up to 3 months. Reheat in the oven at 350°F for 10-15 minutes.
