Preparation
- Preheat your oven to 400°F (about 200°C).
- Unroll the refrigerated pie crusts on a clean surface and cut out rectangles roughly 3x4 inches.
Filling and Assembly
- In a small saucepan, combine mint chocolate chips and heavy cream. Cook over low heat, stirring until melted and smooth. Allow the mixture to cool slightly.
- Lay four rectangles on a baking sheet lined with parchment paper. Spoon a tablespoon of the mint chocolate filling onto the center of each rectangle.
- Place the remaining rectangles on top and seal the edges by pressing down with a fork. Cut a few small slits on top to allow steam to escape.
Baking
- Bake for 12-15 minutes or until golden brown.
Icing
- Mix powdered sugar, vanilla extract, and a few drops of water until achieving a smooth icing consistency. Add food coloring if desired.
- Drizzle the icing over the cooled Pop Tarts and sprinkle with extra toppings if you wish.
Serving
- Let the icing set for a few minutes before serving.
Notes
Store leftovers in an airtight container in the fridge for 3-4 days. Reheat in the oven at 350°F for about 5-10 minutes.
