Ingredients
  

Pie Crust
  • 1 package refrigerated pie crusts Ensure it's Halal-certified.
Filling
  • 1 cup mint chocolate chips
  • 1/4 cup heavy cream
Icing
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • Green food coloring (optional)
  • Sprinkles (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (about 200°C).
  2. Unroll the refrigerated pie crusts on a clean surface and cut out rectangles roughly 3x4 inches.
Filling and Assembly
  1. In a small saucepan, combine mint chocolate chips and heavy cream. Cook over low heat, stirring until melted and smooth. Allow the mixture to cool slightly.
  2. Lay four rectangles on a baking sheet lined with parchment paper. Spoon a tablespoon of the mint chocolate filling onto the center of each rectangle.
  3. Place the remaining rectangles on top and seal the edges by pressing down with a fork. Cut a few small slits on top to allow steam to escape.
Baking
  1. Bake for 12-15 minutes or until golden brown.
Icing
  1. Mix powdered sugar, vanilla extract, and a few drops of water until achieving a smooth icing consistency. Add food coloring if desired.
  2. Drizzle the icing over the cooled Pop Tarts and sprinkle with extra toppings if you wish.
Serving
  1. Let the icing set for a few minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Reheat in the oven at 350°F for about 5-10 minutes.
