Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-5 minutes).
- Add in the eggs one at a time, mixing each before adding the next, then mix in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, stirring until combined.
- Gently fold in the mint chocolate chips and optional green food coloring.
- Scoop tablespoon-sized amounts of dough onto a parchment-lined baking sheet, spacing them about two inches apart.
Baking
- Bake in the preheated oven for 10-12 minutes, until edges are golden and centers are slightly soft.
- Let them cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for 5-7 days, or freeze for up to three months. Thaw at room temperature or microwave for 10-15 seconds to restore texture.
