Ingredients
  

For the Cookie Dough
  • 1 cup butter, softened Bring to room temperature
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup mint chocolate chips Add extra for more flavor
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Green food coloring (optional) Add for color pops

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 2-3 minutes).
  3. Beat in the eggs one at a time, then mix in the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  5. Fold in the mint chocolate chips and optional green food coloring.
Baking
  1. Scoop portions of dough onto a parchment-lined baking sheet, spacing them apart.
  2. Bake for 10-12 minutes or until edges are golden brown.
Cooling and Serving
  1. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  2. Serve with a glass of cold milk or a warm cup of tea.

Notes

Consider drizzling with melted chocolate or sprinkling crushed peppermint candies for extra flavor. Store in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months.
