Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
- Beat in the eggs one at a time, then add the vanilla extract and mix until incorporated.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix this into the wet ingredients until just combined.
- Fold in the mint chocolate chips and peppermint extract (if using).
- Scoop the dough onto ungreased baking sheets, leaving space between each cookie.
Baking
- Bake for 10-12 minutes or until edges are lightly golden.
- Allow cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
Notes
For a dairy-free option, use coconut oil instead of butter. Store in an airtight container for up to one week, or freeze for up to three months.
