  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda
  • 0.5 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  3. Beat in the eggs one at a time, then add the vanilla extract and mix until incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix this into the wet ingredients until just combined.
  5. Fold in the mint chocolate chips and peppermint extract (if using).
  6. Scoop the dough onto ungreased baking sheets, leaving space between each cookie.
Baking
  1. Bake for 10-12 minutes or until edges are lightly golden.
  2. Allow cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

Notes

For a dairy-free option, use coconut oil instead of butter. Store in an airtight container for up to one week, or freeze for up to three months.
