Preparation
  1. Start by toasting your slices of bread until they are golden brown and crispy, about 3-4 minutes on a regular toaster or until evenly toasted in a toaster oven.
  2. While the bread is toasting, scoop the ripe avocados into a bowl. Add lemon juice, salt, and pepper to taste, and mash with a fork until smooth but still a bit chunky.
  3. Once the bread is toasted, spread a generous amount of the mashed avocado onto each slice.
  4. Top each avocado toast with halved cherry tomatoes. Drizzle a bit of olive oil on top and add extra salt and pepper if desired.

Notes

Experiment with your bread type; gluten-free options work wonderfully. Toast your bread just before serving to keep it crispy. Prevent browning by adding lemon juice immediately after mashing the avocado.
