Pastry Ingredients
  • 1.5 cups all-purpose flour For the shell
  • 0.5 cups unsalted butter, softened Can substitute with coconut oil or vegan butter
  • 0.25 cups granulated sugar
  • 0.25 teaspoon salt
  • 1 unit egg yolk
  • 2-3 tablespoons cold water Just enough to help form the dough

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine 1.5 cups of all-purpose flour, 0.25 cups of granulated sugar, and 0.25 teaspoon of salt. Mix well.
  3. Add 0.5 cup of softened unsalted butter to the dry ingredients and blend until the mixture resembles coarse crumbs.
  4. Incorporate 1 egg yolk into the mixture, followed by 2-3 tablespoons of cold water, mixing until combined.
  5. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  6. Roll out the dough on a floured surface to about 1/8-inch thickness. Cut out circles and place in tartlet tins or a muffin tin.
  7. Poke the bottom of each shell with a fork to prevent puffing. Bake for 15-20 minutes or until golden brown. Allow to cool.
  8. Once cooled, fill the mini tart shells with your favorite sweet or savory fillings.

Notes

Store the mini tart shells in an airtight container for up to 3 days. They can be frozen for up to a month and reheated at 350°F (175°C) for 5-7 minutes.
