Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy (about 2-3 minutes using an electric mixer on medium speed).
  3. Incorporate the egg and vanilla extract; mix until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry mixture to the wet mixture, stirring until just combined. Avoid overmixing!
  6. Using a small cookie scoop or tablespoon, drop rounded dough onto ungreased baking sheets, spacing them about 2 inches apart.
Baking
  1. Place the baking sheets in the preheated oven and bake for 8-10 minutes, until the edges are lightly golden.
  2. Allow cookies to cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. To freeze, place in a single layer in a freezer-safe container, separated by parchment paper. They can last up to three months in the freezer. Reheat in the oven at 350°F for about 5 minutes before enjoying.
