Ingredients
  

For the crust
  • 1 cup Graham cracker crumbs For crust
  • 2 tablespoons Melted butter or margarine
For the filling
  • 8 oz Cream cheese, softened Make sure it's at room temperature
  • 1/2 cup Sugar
  • 1/2 cup Pumpkin puree
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Pumpkin pie spice
  • 1/4 teaspoon Salt
  • 2 large Eggs
For topping
  • Whipped cream (optional) For topping

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs with melted butter until the mixture resembles wet sand. Line a muffin tin with cupcake liners and press a small amount of this mixture into each liner to form the crust.
  3. In a separate bowl, beat the softened cream cheese with a hand mixer until smooth. Gradually add sugar, pumpkin puree, vanilla extract, pumpkin pie spice, and salt. Beat until creamy and well combined.
  4. Add the eggs one at a time, beating on low speed just until combined. Be cautious not to overbeat.
  5. Spoon the pumpkin filling evenly into each cupcake liner, filling them about 3/4 full.
Baking
  1. Place the muffin tin in the preheated oven and bake for about 20-25 minutes or until the centers are set. They should jiggle slightly when lightly shaken.
Cooling and Serving
  1. Allow them to cool on a wire rack for about 10 minutes, then refrigerate for at least 2 hours to chill.
  2. Top each mini cheesecake with whipped cream and a sprinkle of cinnamon or crushed nuts before serving.

Notes

To avoid cracks, don’t overmix the filling and avoid frequent oven door openings while baking. For a dairy-free option, substitute cream cheese with a dairy-free alternative.
