Ingredients
  

For the peach filling
  • 2 cups sliced peaches (fresh or canned) Peel and slice fresh peaches, or drain canned peaches.
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
For the batter
  • 1 cup all-purpose flour Can be replaced with gluten-free flour.
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) to prepare for baking.
  2. If using fresh peaches, peel and slice them, then toss them with sugar and lemon juice in a bowl. If using canned peaches, drain them and mix with sugar and lemon juice.
  3. In another bowl, mix the flour, baking powder, and salt. Then, pour in the melted butter, milk, and vanilla extract. Stir until just combined; the batter may be slightly lumpy.
Assembly
  1. In a greased muffin tin or small baking dishes, first place a scoop of the peach mixture, then top it with a spoonful of batter.
Baking
  1. Place in the preheated oven and bake for 25-30 minutes, or until the cobbler is golden brown and the peaches are bubbly.
Serving
  1. Once it’s out of the oven, let it cool slightly before serving. It’s delightful warm, perhaps with a scoop of ice cream on top!

Notes

Experiment with other fruits or add a crumble topping with oats or nuts for extra crunch. Store in an airtight container in the refrigerator for up to five days or freeze for up to three months. Reheat in a preheated oven at 350°F (175°C) for about 15-20 minutes.
