Preparation
- Preheat your oven to 350°F (175°C).
- In a pot of boiling water, blanch the chopped green beans for about 3-4 minutes, until they are bright green and just tender. Drain and set aside.
- In a large mixing bowl, combine the cream of mushroom soup, cheddar cheese, garlic powder, onion powder, and a pinch of salt and pepper. Stir until well mixed.
- Add in the blanched green beans and half of the fried onions. Gently fold the mixture until the green beans are evenly coated.
- Using a tablespoon, scoop the mixture into a greased muffin tin. Pack them tightly to form little bites.
- Sprinkle additional fried onions on top of each bite for a crispy finish.
- Place in the preheated oven and bake for 15-20 minutes, or until the bites are golden and the mixture is bubbly.
Serving
- Remove from the oven and let them cool slightly before serving. Enjoy!
Notes
Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. Reheat in a preheated oven at 350°F (175°C) for about 10-15 minutes until heated through.
