Mini Fruit Pies

Ingredients
  

For the crust
  • 1 package refrigerated pie crusts
For the filling
  • 1 cup mixed fruits (such as berries, diced apples, or peaches)
  • 2 tablespoons sugar Adjust to taste.
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 large egg (for egg wash) Beaten.
  • optional powdered sugar for dusting

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a medium-sized mixing bowl, combine the mixed fruits, sugar, cornstarch, and vanilla extract. Let the mixture sit for about 10 minutes.
  3. On a lightly floured surface, roll out the refrigerated pie crusts to about ¼ inch thick.
  4. Using a cookie cutter or a glass, cut out small circles about 3-4 inches in diameter.
Assembly
  1. Place half of the circles on a lined baking sheet. Spoon a tablespoon of the fruit mixture onto each circle, leaving space around the edges.
  2. Place the other half of the circles on top, pressing the edges to seal. Use a fork to crimp the edges.
  3. Brush a thin layer of the beaten egg over the top of each pie.
Baking
  1. Bake for about 25-30 minutes, or until the edges are golden and the filling is bubbling.
  2. Once baked, allow them to cool for a few minutes before dusting with powdered sugar, if desired.

Notes

Feel free to mix and match the fruits based on what’s seasonal. Store in the refrigerator for up to 3 days or freeze for up to 2 months.
