  • 2 cups cooked chicken, shredded
  • 1 box (7.25 oz) Rice-A-Roni (chicken flavor)
  • 2 cups water
  • 1 can (10.5 oz) cream of chicken soup (halal)
  • 1 cup sour cream
  • 1 cup shredded cheese (preferably cheddar or a blend)
  • 1/2 cup frozen mixed vegetables (peas, carrots, corn)
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan, combine Rice-A-Roni and water. Cook according to package instructions until tender, then set aside.
  3. In a large mixing bowl, combine the cooked chicken, cream of chicken soup, sour cream, garlic powder, mixed vegetables, and half of the shredded cheese. Stir until well combined.
  4. Gently fold the cooked Rice-A-Roni into the mixture until everything is evenly incorporated.
  5. Pour the mixture into a greased 9x13-inch baking dish, spreading it evenly.
  6. Sprinkle the remaining shredded cheese over the top.
  7. Place in the oven and bake for 25-30 minutes until bubbly and golden on top.
  8. Allow to cool for a few minutes, then garnish with chopped green onions, if desired.
  9. Ready to serve and enjoy!

Notes

For substitutions, feel free to use shredded halal turkey or chickpeas for a vegetarian version. Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 3 months.
