  • 2 pieces ripe avocados Choose ripe avocados for the best flavor.
  • 1 lime lime, juiced Fresh lime juice enhances flavor.
  • 1/2 teaspoon chili powder Adjust according to taste.
  • Salt to taste Salt Season to your liking.
Corn Topping
  • 1 cup canned corn or grilled corn Drain and rinse canned corn; shave kernels off grilled corn.
  • 1/4 cup chopped fresh cilantro Adds freshness to the dish.
  • 4 slices bread (your choice) Choose your favorite bread for toasting.
  • Queso fresco or feta optional Queso fresco or feta for topping Enhances flavor, optional based on preference.

Preparation
  1. Start by toasting your choice of bread to a nice golden crisp.
  2. If using canned corn, drain and rinse it. For grilled corn, shave the kernels off the cob. In a bowl, mix the corn with lime juice, chili powder, and a pinch of salt.
  3. Slice the ripe avocados in half, remove the pit, and scoop the flesh into a bowl. Mash it gently with a fork, adding a sprinkle of salt and lime juice.
Assembly
  1. Spread the mashed avocado generously on each slice of toasted bread.
  2. Spoon the corn mixture on top of the avocado spread.
  3. For added flavor, sprinkle queso fresco or feta on top, if using.
  4. Garnish with chopped fresh cilantro and enjoy!

Notes

Best served fresh. Leftovers can be stored separately for best results. Prepare corn and avocado spread ahead of time if needed.
