  • 1 lb ground turkey (ensure it’s Halal-certified)
  • 1 can black beans, rinsed and drained Rinse and drain to reduce sodium content.
  • 1 can corn, drained Rinse and drain to reduce sodium content.
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or a Mexican blend) Can use more cheese depending on preference.
  • 1 cup cooked rice (optional) Use brown rice for added fiber if preferred.
  • to taste Salt and pepper
  • as needed Chopped green onions for garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium-high heat, add the ground turkey. Cook for about 5-7 minutes, breaking it apart with a spoon until it’s no longer pink.
  3. Stir in the black beans, corn, diced tomatoes with green chilies, and taco seasoning. Let this mixture simmer for about 5 minutes.
  4. In an oven-safe baking dish, distribute half of the turkey mixture evenly. If using rice, layer that in too. Top with half of the shredded cheese and repeat with remaining turkey mixture and cheese.
  5. Place the casserole in the preheated oven and bake for 25-30 minutes, until the cheese is melted and bubbly.
  6. Sprinkle with chopped green onions for garnish and enjoy.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 2 months. To reheat, defrost overnight and microwave or bake at 350°F until heated through.
