Ingredients
  

For the crust
  • 1 cup graham cracker crumbs
  • 1/4 cup sugar for the crust
  • 1/2 cup melted butter
For the cheesecake filling
  • 2 packages (8 oz each) cream cheese, softened
  • 1 cup sugar for the cheesecake filling
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until well combined and crumbly.
  3. Press this mixture firmly into the bottom of a greased 9x9-inch baking pan.
Making the Cheesecake Filling
  1. In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth.
  2. Gradually add 1 cup of sugar, mixing well. Then, mix in vanilla extract.
  3. Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Scrape down the sides of the bowl to ensure everything is combined evenly.
  4. Sprinkle in the ground cinnamon and salt. Mix until just combined.
Baking
  1. Pour the cheesecake filling over the prepared crust in the baking pan.
  2. Bake in the preheated oven for about 30 minutes, or until the cheesecake is set and the edges are lightly golden.
  3. Let the bars cool in the pan for about 30 minutes before slicing into squares.
  4. Dust the top with additional cinnamon sugar if desired.

Notes

These bars can be dressed up with drizzles of caramel or chocolate sauce. They can be stored in an airtight container in the refrigerator for up to 5 days.
