Ingredients
  

For the Marinade
  • 1/4 cup olive oil
  • 2 tablespoons lime juice Freshly squeezed is best
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 pounds chicken (breasts or thighs)

Method
 

Preparation
  1. In a mixing bowl, combine the olive oil, lime juice, minced garlic, chili powder, cumin, paprika, salt, black pepper, and cayenne pepper (if using). Whisk until all ingredients are well mixed.
  2. Place your chicken in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring that each piece is well coated. Seal the bag or cover the dish tightly.
  3. Allow the chicken to marinate in the refrigerator for at least 30 minutes, though 2-4 hours is ideal for maximum flavor.
Cooking
  1. When ready to cook, preheat your grill (or a pan on medium heat).
  2. Remove the chicken from the marinade and discard any leftover marinade.
  3. Cook the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F.
Serving
  1. Once cooked, let the chicken rest for about 5 minutes before slicing. Serve with your favorite sides and toppings!

Notes

For a Halal-friendly twist, swap in turkey or tofu for a leaner alternative. Marinate overnight for better results. Ensure to discard used marinade to avoid overly salty flavors. Store any leftover chicken in an airtight container in the refrigerator for up to 3-4 days.
