  • 1 large head Romaine lettuce, chopped
  • 1 cup tortilla strips (store-bought or homemade) Add right before serving for crunch
  • 1/2 cup Parmesan cheese, grated
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, drained and rinsed Can substitute with pinto beans
  • 1/4 cup fresh cilantro, chopped
  • 1 Juice lime Freshly squeezed for best flavor
  • 1/2 cup Caesar dressing (ensure it's halal-compliant) Adjust to desired creaminess

Preparation
  1. Wash the Romaine lettuce thoroughly, chop it into bite-sized pieces, and place it in a large salad bowl. Set aside.
  2. Dice the avocado and halve the cherry tomatoes, then add them to the bowl along with the black beans, chopped cilantro, and grated Parmesan cheese.
Dressing and Tossing
  1. Drizzle the Caesar dressing over the ingredients in the bowl. For a brighter flavor, squeeze the juice of one lime over the top.
  2. Using salad tongs or two large spoons, gently toss the salad until everything is well-coated with dressing and lime juice.
Serving
  1. Sprinkle the crispy tortilla strips on top right before serving for added crunch.

Notes

For a heartier salad, add grilled chicken or shrimp (ensure it's halal). Use the freshest produce available for the best flavor. Store leftovers in an airtight container in the fridge, best consumed within 1-2 days. Keep dressing separate when storing.
