Ingredients
  

For the marinade
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice freshly squeezed for best flavor
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika for color and flavor

For cooking
  • 4 pieces boneless, skinless chicken breasts (about 1.5 pounds)
  • 1 tablespoon fresh parsley, chopped for garnish

Method
 

Preparation
  1. In a large bowl, combine olive oil, lemon juice, minced garlic, dried thyme, paprika, salt, and pepper. Whisk until well blended.
  2. Add the chicken breasts to the marinade, ensuring they are evenly coated. Cover and let them marinate for at least 15-30 minutes.
Cooking
  1. Heat a large skillet over medium-high heat. Add a bit more olive oil if the pan is dry.
  2. Once the skillet is hot, add the marinated chicken breasts. Cook for about 6-7 minutes on one side without moving them.
  3. Carefully flip the chicken and reduce heat to medium-low. Cook for an additional 6-8 minutes, or until the internal temperature reaches 165°F (75°C).
  4. Once cooked, remove from the skillet and let the chicken rest for 5 minutes before slicing.
Serving
  1. Garnish your chicken with fresh parsley and serve with sides of your choice.

Notes

For best results, marinate the chicken longer for more flavor. Allow chicken to rest after cooking to maintain juiciness.
