Preparation
- Preheat the oven to 350°F (175°C).
- In a large pot, bring salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced zucchini, bell peppers, and cherry tomatoes. Sauté for about 5-7 minutes until the vegetables are tender.
- Stir in the chopped spinach and remove from heat.
Mixing and Baking
- In a large bowl, combine the cooked pasta, sautéed vegetables, marinara sauce, Italian seasoning, salt, and pepper. Mix well.
- Transfer the pasta mixture to a greased 93-inch baking dish. Spread evenly and top with shredded mozzarella and grated Parmesan cheese.
- Bake for 25-30 minutes, until the cheese is bubbly and golden.
- Remove from the oven and let it cool for a few minutes before serving.
Notes
Vegetable substitutions like broccoli or carrots can be used. Mix different cheeses for extra flavor. Add red pepper flakes for heat.
