- In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, dried dill, and a pinch of salt and pepper. Mix everything well until smooth to create the tzatziki dressing.
- Shred your cooked chicken into bite-sized pieces.
- In a large mixing bowl, combine the shredded chicken with the tzatziki sauce and stir until the chicken is well coated.
- On a plate or in a bowl, lay down the mixed greens or salad leaves, then add the chicken tzatziki mixture on top.
- Garnish with halved cherry tomatoes and Kalamata olives if desired.
- Serve fresh or store it for later!
Notes
For added flavor, use herbed Greek yogurt varieties. If you have leftovers, store in an airtight container for up to 3 days.
