Ingredients
  

Main Ingredients
  • 1 cup rice (white or brown) Use brown rice for a healthier option, cooking time will increase.
  • 1 can chickpeas, drained and rinsed 15 oz can.
  • 1 can black beans, drained and rinsed 15 oz can.
  • 1 cup cherry tomatoes, halved
  • 1 whole cucumber, diced
  • 1/4 cup red onion, diced
Dressing
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp oregano
  • to taste Salt
  • to taste pepper
  • for garnish Fresh parsley To add freshness and color.

Method
 

Cooking Rice
  1. Cook the rice according to the package instructions.
  2. If using brown rice, note that it will take about 40-45 minutes to cook.
Preparing Ingredients
  1. While the rice is cooking, drain and rinse the chickpeas and black beans.
  2. Dice the cucumber, halve the cherry tomatoes, and finely chop the red onion.
Mixing Dressing
  1. In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
Combining Ingredients
  1. Once the rice is cooked, fluff it with a fork and let it cool slightly.
  2. In a large mixing bowl, combine the rice, drained beans, chickpeas, cucumber, cherry tomatoes, and red onion.
Dressing and Serving
  1. Pour the dressing over the salad and gently mix until everything is well coated.
  2. Transfer the Mediterranean Rice and Beans to a serving dish, garnish with fresh parsley, and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze for up to a month. Reheat gently in the microwave or on the stove.
