Cooking Rice
- Cook the rice according to the package instructions.
- If using brown rice, note that it will take about 40-45 minutes to cook.
Preparing Ingredients
- While the rice is cooking, drain and rinse the chickpeas and black beans.
- Dice the cucumber, halve the cherry tomatoes, and finely chop the red onion.
Mixing Dressing
- In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
Combining Ingredients
- Once the rice is cooked, fluff it with a fork and let it cool slightly.
- In a large mixing bowl, combine the rice, drained beans, chickpeas, cucumber, cherry tomatoes, and red onion.
Dressing and Serving
- Pour the dressing over the salad and gently mix until everything is well coated.
- Transfer the Mediterranean Rice and Beans to a serving dish, garnish with fresh parsley, and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze for up to a month. Reheat gently in the microwave or on the stove.
