Method
Preparation
- Gather all your ingredients. Dice the onion, mince the garlic, and chop the cucumber and parsley.
Cooking
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the ground beef to the skillet. Break it apart with a spatula and cook until it’s browned, typically about 5-7 minutes. Drain any excess grease if needed.
- Stir in the cumin, paprika, salt, and pepper, cooking for an additional 2 minutes to let the flavors meld together.
Assembly
- Remove the skillet from heat. Open each pita pocket and stuff generously with the ground beef mixture.
- Load up your pita pockets with diced tomatoes, cucumbers, crumbled feta cheese, and fresh parsley. Drizzle tzatziki sauce on top if you’re feeling adventurous!
Serving
- Serve your Mediterranean wonder with a side of extra veggie sticks or a fresh salad.
Notes
If you have leftovers, store them in an airtight container in the fridge for up to 3 days. For longer storage, freeze the cooked ground beef mixture for up to 2 months. Reheat the beef in a skillet or microwave, and toast the pita pockets to refresh their texture.
