Preparation
- In a medium saucepan, bring the vegetable broth (or water) to a boil.
- Add the couscous, stir, and remove from heat. Cover and let it steam for about 5 minutes until fluffy.
- Once the couscous has absorbed the liquid, use a fork to fluff it up, breaking apart any clumps.
- While your couscous is steaming, dice the cucumber, halve the cherry tomatoes, chop the red onion and bell pepper, and finely chop the parsley.
Mixing the Salad
- In a large bowl, combine the fluffed couscous, diced vegetables, and parsley. Toss gently to combine.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to evenly coat everything.
Serving
