Ingredients
  

Couscous Preparation
  • 1 cup couscous
  • 1.25 cups vegetable broth or water Use vegetable broth for added flavor.
Fresh Vegetables
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 0.5 medium red onion, finely chopped
  • 0.5 medium bell pepper, diced (any color)
  • 0.25 cup fresh parsley, chopped Can substitute with other herbs.
Dressing & Optional Ingredients
  • 1 lemon, juiced Adjust amount to taste.
  • 3 tablespoons olive oil
  • to taste salt and pepper Be cautious with salt due to feta.
  • 0.25 cup feta cheese, crumbled (optional) Optional for serving.

Method
 

Preparation
  1. In a medium saucepan, bring the vegetable broth (or water) to a boil.
  2. Add the couscous, stir, and remove from heat. Cover and let it steam for about 5 minutes until fluffy.
  3. Once the couscous has absorbed the liquid, use a fork to fluff it up, breaking apart any clumps.
  4. While your couscous is steaming, dice the cucumber, halve the cherry tomatoes, chop the red onion and bell pepper, and finely chop the parsley.
Mixing the Salad
  1. In a large bowl, combine the fluffed couscous, diced vegetables, and parsley. Toss gently to combine.
  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to evenly coat everything.
Serving
  1. Optionally, sprinkle crumbled feta cheese on top right before serving. Enjoy your Mediterranean Couscous Salad fresh!

Notes

Customize it with your favorite vegetables or proteins like chickpeas. Let it chill to enhance flavors. Adjust lemon juice for tanginess and taste for salt.
