  • 1 cup cherry tomatoes, halved Use ripe cherry tomatoes for sweetness.
  • 1/2 cup red onion, finely chopped Red onion adds a nice color and flavor.
  • 1/2 cup Kalamata olives, pitted and sliced Briny flavor enhances the salad.
  • 1/2 cup feta cheese, crumbled You can substitute with goat cheese if desired.
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar Use non-alcoholic vinegar if needed.
  • 1 teaspoon dried oregano Adds a classic Mediterranean flavor.
  • to taste Salt and pepper Adjust according to preference.

Method
 

Preparation
  1. Start by chopping the romaine lettuce and cucumbers into bite-sized pieces.
  2. Halve the cherry tomatoes and finely chop the red onion.
Combining Ingredients
  1. In a large mixing bowl, combine the chopped romaine, cucumbers, cherry tomatoes, and red onion.
  2. Gently fold in the sliced Kalamata olives and crumbled feta cheese.
Making the Dressing
  1. In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
Finishing Touches
  1. Pour the dressing over the salad and toss everything together until well combined.
  2. Adjust the seasoning if necessary.
  3. Serve immediately or let it chill in the refrigerator for about 30 minutes to allow the flavors to meld together.

Notes

For optimal crunch, prepare the salad just before serving. Keep the dressing separate until you’re ready to eat. Store leftovers in an airtight container for up to 3 days, with dressing on the side.
