Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the diced chicken breasts, sliced zucchinis, chopped red bell pepper, and halved cherry tomatoes.
  3. Drizzle the olive oil over the mixture, then sprinkle with dried oregano, salt, and pepper. Toss everything together until well combined and evenly coated.
  4. Transfer the mixture into a baking dish, spreading it out evenly. Top with crumbled feta cheese.
  5. Place the dish in the oven and bake for about 30 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. Remove from the oven and garnish with fresh basil before serving.

Notes

If substituting chicken, consider cubed turkey or chickpeas for a veggie-packed version. Avoid overcooking the vegetables for a slight crunch.
