  • 2 cups diced chicken breast or thighs for added flavor
  • 2 medium zucchini, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
Seasonings and Oils
  • ½ teaspoon paprika
  • ½ teaspoon dried oregano
  • to taste salt and pepper
  • 2 tablespoons olive oil
Cheeses
  • 1 cup shredded mozzarella cheese
  • ¼ cup crumbled feta cheese optional, for added creaminess

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, season the diced chicken breast with paprika, oregano, salt, and pepper. Drizzle with olive oil and toss until well coated.
  3. In a greased baking dish, spread the seasoned chicken evenly across the bottom.
  4. Layer on the sliced zucchini, diced onion, minced garlic, and cherry tomatoes.
  5. Give everything a gentle toss in the dish to combine the flavors.
  6. Sprinkle the shredded mozzarella evenly across the top, and crumble feta cheese over the top if using.
Baking
  1. Place your dish in the preheated oven and bake for about 30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
Serving
  1. Allow the bake to cool for a few minutes, then serve warm. Enjoy with a side of fresh salad or crusty bread.

Notes

You can substitute zucchini with other vegetables like bell peppers or eggplants. If you prefer a crispier texture, increase the baking time by 5 minutes. Avoid overcrowding the dish for even cooking.
