Preparation
- If you haven't already, shred your cooked chicken into bite-sized pieces.
- Lay out your tortilla on a flat surface. Spread about 2 tablespoons of hummus evenly over the entire tortilla.
- Place a generous portion of the shredded chicken in the center of the wrap, leaving space around the edges for folding.
- Top the chicken with diced cucumber, halved cherry tomatoes, red onion slices, and sliced olives.
- Crumble your feta cheese over the entire mixture.
- Carefully fold in the sides of the tortilla and roll it up from the bottom tightly.
- Cut the wrap in half, garnish with fresh parsley, and serve with extra hummus or a side salad if desired.
Notes
You can swap out chicken for grilled vegetables for a vegetarian option, or use grilled lamb or beef for a heartier dish. Prep everything in advance for a quick assembly. Refrigerate leftovers for 2-3 days.
