  • 2 cups cooked chicken, shredded Use leftover roast chicken or rotisserie.
  • 1/2 cup hummus Store-bought or homemade.
  • 1 cup cucumber, diced Pick a fresh one.
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced Adjust to your preference.
  • 1/2 cup feta cheese, crumbled For tanginess.
  • 1/4 cup olives, sliced Choose your favorite variety.
  • 4 large tortillas or wraps Whole wheat or traditional.
  • to taste fresh parsley, for garnish For decoration.

Method
 

Preparation
  1. If you haven't already, shred your cooked chicken into bite-sized pieces.
  2. Lay out your tortilla on a flat surface. Spread about 2 tablespoons of hummus evenly over the entire tortilla.
  3. Place a generous portion of the shredded chicken in the center of the wrap, leaving space around the edges for folding.
  4. Top the chicken with diced cucumber, halved cherry tomatoes, red onion slices, and sliced olives.
  5. Crumble your feta cheese over the entire mixture.
  6. Carefully fold in the sides of the tortilla and roll it up from the bottom tightly.
  7. Cut the wrap in half, garnish with fresh parsley, and serve with extra hummus or a side salad if desired.

Notes

You can swap out chicken for grilled vegetables for a vegetarian option, or use grilled lamb or beef for a heartier dish. Prep everything in advance for a quick assembly. Refrigerate leftovers for 2-3 days.
